En aquel momento, se estableci\u00f3 que las salidas de carnes de los establecimientos de todo el pa\u00eds, destinadas a comercio minorista, solo podr\u00e1n hacerse en unidades resultantes del fraccionamiento de las medias reses en trozos cuyos pesos individuales no superaren los 32 kilos.<\/p>\n\n\n\n<p>Ahora, a trav\u00e9s de la Resoluci\u00f3n 91\/2022 publicada el pasado viernes en el Bolet\u00edn Oficial, el Gobierno dict\u00f3 la norma regulatoria para la cadena de distribuci\u00f3n de carnes. As\u00ed, dispuso que las plantas faenadoras, de acuerdo con su modalidad comercial, deber\u00e1n prever en playa de faena la cantidad de trozos que se realicen, cada uno de ellos deber\u00e1 encontrarse identificado con el n\u00famero de tropa, correlativo de faena, clasificaci\u00f3n y tipificaci\u00f3n.<\/p>\n\n\n\n<p>Los sellos sanitarios y comerciales obligatorios deben resultar en todos los casos perfectamente legibles y la identificaci\u00f3n de los trozos deber\u00e1 hacerse indefectiblemente en playa de faena, quedando prohibida la individualizaci\u00f3n posterior.<\/p>\n\n\n\n<p>Adem\u00e1s, las plantas que estampen los sellos deber\u00e1n reemplazarlos por etiquetas impresas por medio de sistemas de computaci\u00f3n en un plazo perentorio de 180 d\u00edas de la puesta en\u00a0vigencia de la Resoluci\u00f3n.<\/p>\n\n\n\n<p>Cada trozo resultante de la divisi\u00f3n de la media res deber\u00e1 ser identificado y trazable mediante una tarjeta que contenga el n\u00famero de establecimiento oficial del troceador, n\u00famero de tropa, n\u00famero de garr\u00f3n, fecha de elaboraci\u00f3n, nombre del producto y peso del trozo, de acuerdo con el texto oficial.<\/p>\n\n\n\n<p>En tanto, los establecimientos en donde se realiza troceo, deber\u00e1n llevar un Libro de Ingreso de Materia Prima Apta para la Elaboraci\u00f3n de Trozos, rubricado por la Direcci\u00f3n Nacional de Control Comercial Agropecuario de la Secretar\u00eda de Agricultura, donde registrar\u00e1n la entrada de la mercader\u00eda en forma cronol\u00f3gica.<\/p>\n\n\n\n<p>Para justificar la medida, Agricultura resalt\u00f3 que es imprescindible asegurar la trazabilidad de la distribuci\u00f3n de carnes en la cadena comercial minorista, as\u00ed como regular la normativa destinada al control de la misma a las que deber\u00e1n ajustarse los establecimientos en donde se realiza troceo a fin de asegurar un marco de transparencia en el
