Con el objetivo de mejorar el entorno alimentario y contribuir a los mecanismos de control, el laboratorio de NIRS del INTA Anguil -La Pampa-, en colaboraci\u00f3n con el grupo de Quimiometr\u00eda de la Facultad de Ciencias Exactas y Naturales, la Universidad Nacional de La Pampa, el Instituto de Ciencias de la Tierra y Ambientales de La Pampa-CONICET de La Pampa, comprob\u00f3 la <strong>eficiencia de la tecnolog\u00eda NIRS<\/strong> a la hora de medir la calidad de acetos bals\u00e1micos y vinagres.<\/p>\n\n\n\n<p>Daniela Ortiz -investigadora de la Estaci\u00f3n Experimental Agropecuaria Anguil del INTA- explic\u00f3: \u201cLa tecnolog\u00eda NIRS se caracteriza por ser una <strong>t\u00e9cnica de an\u00e1lisis cuantitativo y cualitativo<\/strong> de materias primas, basada en la espectroscop\u00eda de reflectancia en el infrarrojo cercano, lo que la convierte en una alternativa innovadora a los m\u00e9todos tradicionales de an\u00e1lisis de laboratorio, especialmente en el control de calidad de alimentos\u201d.<\/p>\n\n\n\n<p>Los modelos desarrollados en este estudio permitieron cuantificar par\u00e1metros clave de calidad de los vinagres y acetos, como la acidez total, acidez vol\u00e1til, acidez fija, pH y polifenoles totales. Adem\u00e1s, se logr\u00f3 una clasificaci\u00f3n efectiva de las muestras en t\u00e9rminos de menor y mayor calidad, especific\u00f3 la investigadora.<\/p>\n\n\n\n<p><strong>\u201cLa principal ventaja de la tecnolog\u00eda NIRS radica en su rapidez, ya que los resultados se obtienen en un tiempo considerablemente menor en comparaci\u00f3n con los m\u00e9todos de laboratorio tradicionales\u201d<\/strong>, indic\u00f3 Marcelo Wagner -investigador del INCITAP CONICET-, y agreg\u00f3: \u201cAdem\u00e1s, su implementaci\u00f3n es amigable con el medio ambiente, ya que no genera residuos, y su manejo resulta sencillo y accesible\u201d.<\/p>\n\n\n\n<p>Como conclusi\u00f3n, los resultados de este estudio respaldaron la <strong>eficacia de la tecnolog\u00eda NIRS <\/strong>en el an\u00e1lisis de calidad, espec\u00edficamente en la industria alimentaria.<\/p>\n\n\n\n<p>\u201cEl equipo de investigaci\u00f3n tiene previsto ampliar su aplicaci\u00f3n, actualmente centrando sus esfuerzos en evaluar la calidad de diversas muestras de cerveza presentes en el mercado local\u201d, puntualiz\u00f3 Ortiz. Y concluy\u00f3:<strong> \u201cCon estos avances, la tecnolog\u00eda NIRS se presenta como una herramienta prometedora para mejorar los procesos de control de calidad en la industria
